Baked leek with tahini

Ingredients:

2 leeks

Olive oil

Salt and pepper

Parsley

Hot chili flakes or red paprika

For the tahini sauce:

1/2 cup tahini paste

1/2 cup water

Juice from half a lemon 

Preparation:

  1. Put leeks in a baking pan and sprinkle with olive oil, salt and pepper.
  2. Bake in a hot oven (220 C) for half an hour.
  3. Prepare tahini sauce by combining ingredients.
  4. Sprinkle with tahini, chopped parsley and hot chili flakes (or paprika) and serve.

Note: The same recipe can be used for preparing Baked Cauliflower with Tahini. Instead of the leeks, boil a cauliflower head in water for around 20 minutes before baking until golden.
